Chocolate Rum Ball Recipe

Ingredients

  • 12 oz semi-sweet chocolate chips
  • ½ cup almond paste
  • 1 cup sour cream
  • ½ teaspoon salt
  • 8 cups vanilla wafers chopped finely
  • 3 cups icing sugar
  • 1 cup unsalted butter melted
  • cup cocoa
  • cups rum
  • 2 cups pecans chopped finely

Instructions

  • In a medium saucepan over low to medium heat, melt chocolate chips. Remove from heat and transfer to a medium bowl. Add in almond paste, sour cream, and salt and stir to combine.
  • In a separate medium bowl mix together chopped vanilla wafers, icing sugar, melted butter, cocoa, rum, and pecans.
  • Combine the two mixtures and mix well.
  • Place in a covered container in the fridge for 24 hours. Do not roll into balls yet.
  • Once chilled, remove from fridge and roll into small 1" balls. Roll in shredded chocolate.
