Ingredients
12ozsemi-sweet chocolate chips
½cup almond paste
1cupsour cream
½teaspoonsalt
8cupsvanilla wafers chopped finely
3cupsicing sugar
1cupunsalted buttermelted
⅔cupcocoa
1½cupsrum
2cupspecanschopped finely
Instructions
In a medium saucepan over low to medium heat, melt chocolate chips. Remove from heat and transfer to a medium bowl. Add in almond paste, sour cream, and salt and stir to combine.
In a separate medium bowl mix together chopped vanilla wafers, icing sugar, melted butter, cocoa, rum, and pecans.
Combine the two mixtures and mix well.
Place in a covered container in the fridge for 24 hours. Do not roll into balls yet.
Once chilled, remove from fridge and roll into small 1" balls. Roll in shredded chocolate.
