Simple Key Lime Pie Recipe

This simple key lime pie recipe is the perfect summer treat. Tart, refreshing, so easy and it comes together so quickly!

Equipment

  • Electric Stand Mixer or Electric Hand Mixer

Ingredients

  • cups graham cracker crumbs
  • cup unsalted butter melted
  • teaspoon salt
  • ¼ cup granulated sugar

For the Filling

  • 1 tablespoon key lime zest
  • 3 egg yolks
  • 14 oz sweetened condensed milk
  • ½ cup key lime juice
  • ¼ cup lime juice

For the Whipping Cream

  • ½ cup heavy whipping cream
  • 1 tablespoon granulated sugar

Instructions

  • Preheat your oven to 325 degrees F. In a microwave safe bowl, melt butter. 
  • If you have full sized graham crackers, pulse them in a food processor. 
  • In a medium sized bowl combine melted butter, graham cracker crumbs, salt, and granulated sugar. 
  • Mix until graham cracker crumbs are well coated. 
  • Pour graham cracker crumbs into a pie dish. Press down mixture to spread evenly across the bottom of the pie dish and up the sides of the dish. Make sure to pack them down firmly, this will prevent them from crumbling.
  • Place pie crust in oven and bake for 8 minutes.
  • Remove from oven and place on a metal cooling rack. Begin working on pie filling. 

For the Filling

  • In the bowl of an electric stand mixer, beat egg yolks and lime zest for 3-4 minutes until combined. You can also use a handheld mixer if you do not have an electric stand mixer. 
  • Pour in sweetened condensed milk and mix until combined. 
  • Add in lime juice and mix until completely combined. 
  • Pour filling over pie crust. Place in oven and bake at 325 degrees F for 15-20 minutes. 
  • Your pie will be slightly jiggly in the centre but firm on the outside. 
  • Remove and allow to cool on a metal cooling rack. 
  • Transfer to refrigerator.
  • Decorate with whipping cream and lime zest before serving!

For the Whipping Cream

  • Using a handheld mixer or an electric stand mixer with the whisk attachment, beat whipping cream and granulated sugar until light and fluffy. 

Notes

Note that I've used both key lime and regular lime juice. You can certainly use all key lime juice, but they can be very tedious to squeeze. I opted to substitute some regular lime juice as well.
