Decadent Peanut Butter Chocolate Cupcakes

There are hands down the best cupcakes I’ve ever tasted. Bold statement - I know. My peanut butter chocolate cupcakes are moist, rich, and the perfect amount of peanut buttery (not a word, I know)

If you have been following me for a while now, you know that I am an absolute chocolate fanatic. But, I haven’t let it sneak yet that my favourite chocolate is chocolate with peanut butter!

For these cupcakes, you will start with my chocolate cupcakes recipe. This is also a take on my fluffy chocolate cake recipe. You see, this recipe is NEVER fails. It’s just perfect - so we use it in a variety of recipes here on The BAKED Blog.

Why I love these chocolate peanut butter cupcakes:

  • They are fluffy and their flavour is so rich!
  • The come together incredibly quickly.
  • They use oil to make them extra moist.
  • The frosting is a creamy peanut butter dream.

Keys to Success Making These Cupcakes:

  1. Fill your cupcakes liners ⅔rds full. This ensures the optimal cupcake height.
  2. Fresh coffee is key to intensifying the chocolate flavour. You can substitute water for coffee if you like, but I prefer the coffee!
  3. Sift your cocoa powder. Cocoa frequently has little lumps in it. Sifting prevents these from ending up in your batter or over mixing to try to remove them.

The batter will be thin, this is okay!!

Homemade Buttermilk:

For every one cup of buttermilk needed, add 1 tablespoon white vinegar to a cup of milk. For this recipe you will combine ½ cup of whole milk at room temperature with ½ tablespoon white vinegar and allow them to sit for 10 minutes before using in your recipe. It will appear curdled, this is okay.

I’ve topped my chocolate cupcakes with creamy peanut butter frosting and garnished with salted peanuts and drizzled honey! You could also top with peanut butter cups, or drizzle melted peanut butter on top. If you like this recipe, I think you’ll like my fluffy chocolate cupcakes with chocolate buttercream frosting too!

Peanut Butter Chocolate Cupcakes

Decadent and rich, these are the best chocolate peanut butter cupcakes! These use my go to chocolate cupcake recipe and are topped with creamy, smooth peanut butter frosting.

Ingredients
  

  • 1 cup All Purpose Flour
  • 1 cup Granulated Sugar
  • ¼ cup Cocoa Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Salt
  • ¼ cup Vegetable Oil
  • ½ cup Buttermilk At room temperature
  • 1 Egg At room temperature
  • ½ cup Hot Coffee
  • 1 teaspoon Pure Vanilla extract

Instructions
 

  • Preheat your oven to 350 degrees F. Fill cupcake tray with cupcake liners. Set aside
  • Into the bowl of an electric mixer with the whisk attachment, combine sifted flour, sugar, cocoa, baking soda, baking powder and salt. Stir to combine.
  • In a separate mixing bowl, combine egg, buttermilk, oil, hot coffee, and vanilla.
  • Turn your mixer to low speed and add the wet ingredients to the dry ingredients. Mix until just combined - about 30 seconds to 1 minute.
  • Distribute batter evenly between cupcake liners. They should be about ⅔rds full.
  • Bake for 16-18 minutes or until a knife inserted into the centre comes out clean. 
  • Remove from cupcake tray after 5 minutes. Cool completely on cooling racks before icing.

Peanut Butter Frosting

Perfectly sweet and infused with peanut butter, this is the best peanut butter frosting!

Ingredients
  

  • 1 cup Unsalted Butter At room temperature
  • ⅓ cup Smooth Peanut Butter
  • 1 teaspoon Pure Vanilla Extract
  • 2½ cups Powdered (Confectioners) Sugar

Instructions
 

  • In the bowl of an electric stand mixer, beat butter until smooth and light in colour about 2 minutes. Scrape down the sides of the bowl.
  • With the mixer on low speed, add in peanut butter and vanilla and mix until combined. Scrape down the sides of the bowl. 
  • Next add in the powered sugar one cup at a time with the mixer on low.
  •  Increase the speed of the mixer to medium for 1 more minute until buttercream is light and fluffy. Don't over mix, because the frosting will become too soft and difficult to pipe. 
  • Pipe onto cupcake and garnish with salted peanuts and drizzle slightly melted honey over top. Enjoy!
