Easy Caramel Popcorn Recipe

Rich and delicious caramel popcorn with silky caramel and mixed nuts - this is highly addicting!

Ingredients

  • 1 cup unpopped popcorn
  • 1 cup margargine
  • 2 cups brown sugar
  • ½ cup light corn syrup
  • 1 teaspoon salt
  • ½ teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • 200 g mixed nuts

Instructions

  • Preheat oven to 200 degrees F
  • Pop popcorn and place into a large roasting pan
  • In a medium saucepan over low-medium heat, bring to a boil margarine, brown sugar, corn syrup and salt
  • Once at a boil, lower heat to low and add in baking soda and vanilla
  • Mixture will bubble so take caution to not burn yourself!
  • Pour mixture over popcorn to fully coat.
  • Add nuts to popcorn
  • With a heatprood spatula, mix popcorn so caramel completely coats popcorn
  • Place into oven for 1 hour. Every 15 minutes, remove pan from oven and stir
  • Eat warm or allow to cool before enjoying!
