This buffalo chickpea quesadilla is flavorful, spicy, and filled with gooey melted cheese. It's a staple in our house and the perfect spin on a classic quesadilla.
⅓cupbuffalo sauceI use Primal Kitchen Buffalo Sauce
1teaspoonminced garlic
1tablespoonolive oil
1⅓cupgrated cheddar cheeseUse more as needed!
½cupsour creamfor dipping your quesadilla in
Instructions
Rinse and dry your chickpeas. Put aside.
Dice onions finely. Place onions and garlic in a medium saucepan and cook over medium heat for about 2 minutes.
Add buffalo sauce and chickpeas. Cook for another 2-3 minutes until chickpeas are soft.
Use a potato masher to mash ½ of the chickpeas.
Remove from heat and set aside.
Over low to medium heat, sprinkle some cheese into the frying pan. Place the quesadilla on top (this is make the outside of the quesadilla have cheese too!) Assemble quesadilla with one side of tortilla with cheese and scoop a generous helping of chickpea filling on top of the cheese. Cook until cheese it melted.
