Equipment

Ingredients

  • 3 large ripe bananas
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ¼ cup dark brown sugar
  • 2 eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • ¼ cup unsweetened greek yogurt
  • cups all purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup milk chocolate chips

Instructions

  • Preheat oven to 350 degrees F
  • Grease a 1.5 quart glass loaf pan with baking spray or butter. Set aside.
  • In a small bowl, sift flour, baking powder, baking soda and salt together. Stir to combine.
  • In a medium bowl, mash bananas. Pour in vegetable oil and beat with electric hand mixer to combine. 1-2 minutes.
  • With the mixer on low, gradually pour in white and brown sugar. Beat for another 1 minute.
  • Scrape down the sides of the bowl and add eggs one at a time. Allow each to incorporate before adding the next.
  • Next, beat in vanilla and greek yogurt. Mix until combined.
  • With the mixer on low speed, gradually pour in dry ingredients. Mix until just combined.
  • Fold in chocolate chips. Save a handful to place on top of the loaf once the batter has been added to the loaf pan.
  • Pour batter into loaf pan. Sprinkle remaining chocolate chips on top.
  • Bake for 1 hour or until a toothpick inserted into the centre comes out clean.
  • Cool completely in pan before removing.
