What is Biscoff Buttercream?

What is Cookie Butter?
Commonly known as biscoff, cookie butter, or speculoos, it is a spread made from ground up spice cookies. It is rich, indulgent, and the perfect treat to add to any bake! You can find it at a variety of grocery stores in the U.S. including Trader Joe's and at Superstore and London Drugs.
Instructions
Begin by making a batch of moist chocolate cupcakes. These cupcakes are rich, chocolatey, and SO easy to make. You can prepare the chocolate cupcake batter and bake them in under 25 minutes.
Allow your cupcakes to cool completely before frosting them.
Make Biscoff Buttercream: Cream butter in electric stand mixer until light and fluffy. Add in cookie butter and mix on high until the mixture lightens in colour. With the mixer on low speed, begin adding in your powdered sugar and finish with the salt. Complete your biscoff buttercream by adding in vanilla extract and heavy cream.
*Your buttercream should be light and fluffy. It's important to beat your buttercream for at least 6 minutes total or your buttercream won't be smooth, creamy, and moveable. Buttercream that hasn't been whipped long enough is more dense and harder to pipe.
I've topped my fluffy chocolate cupcakes with biscoff buttercream using my Wilton 6B piping tips and added chocolate shavings. You could omit the chocolate shavings or change out the cupcake flavour for vanilla for more biscoff cupcake flavour options!!
