This is my go to recipe for chocolate cupcakes. It’s the only recipe I ever use! (also the same batter as my fluffy chocolate cake!) These cupcakes are simple and delicious.

- You only need two bowls! One for your wet ingredients and one for your dry ingredients. You could even get away with a large measuring glass and one bowl!!

- The batter will be thin, this is okay!!
- Fill your cupcake liners ⅔rds full!
- Fresh coffee is key to intensifying the chocolate flavour. If you don't want to use coffee, you can substitute with hot water.
I’ve paired these cupcakes with American style chocolate buttercream. It brings a sweet nostalgia of my childhood!! If you'd prefer them with vanilla buttercream frosting you can grab my Swiss meringue buttercream recipe instead.

Homemade Chocolate Cupcake Recipe
Ingredients
- 1 cup Granulated Sugar
- 1 cup All Purpose Flour
- ¼ cup Cocoa
- 1 teaspoon Baking Soda
- ¼ teaspoon Baking Powder
- ¼ teaspoon salt
- ¼ cup Vegetable Oil
- ½ cup Buttermilk At room temperature
- 1 Egg At room temperature
- ½ cup Hot Coffee
- 1 teaspoon Pure Vanilla Extract
Instructions
- Preheat your oven to 350 degrees F. Fill cupcake tray with cupcake liners. Set aside.
- Into the bowl of an electric mixer with the whisk attachment, combine sifted flour, sugar, cocoa, baking soda, baking powder and salt. Stir to combine.
- In a separate mixing bowl, combine egg, buttermilk, oil, hot coffee, and vanilla.
- Turn your mixer to low speed and add the wet ingredients to the dry ingredients. Mix until just combined - about 30 seconds to 1 minute.
- Distribute batter evenly between cupcake liners. They should be about ⅔rds full.
- Bake for 16-18 minutes.
- Remove from cupcake tray after 5 minutes. Cool completely on cooling racks before icing.
Easy Chocolate Buttercream
Ingredients
- 1 cup Unsalted Butter At room temperature
- 2¼ cups Powdered (confectioners) sugar sifted
- ¼ cups Cocoa Powder Sifted
- 1 teaspoon Pure vanilla extract
- 1 tablespoon Heavy Cream
- ¼ teaspoon Salt
Instructions
- In the bowl of a stand mixer, beat butter until smooth and light in colour. Scrape down the sides of the bowl.
- With the mixer on low speed, add powered sugar one cup at a time.
- Scrape down the sides. Turn mixer to low speed and add in cocoa powder. Mix until combined.
- Scrape down sides once more. Turn mixer to low speed and add vanilla, heavy cream and salt. Mix on medium to high for 2-3 more minutes until buttercream is light and fluffy.
