These gingerbread men use my all time favorite soft gingerbread cookies recipe. . They are chewy and perfectly spiced! Add this one to your holiday baking list if you haven't already.
I have to admit, gingerbread cookies didn't used to be on my holiday baking list but I'm a sucker for tradition! I decided to create my own gingerbread man cookie recipe this year to give them another try. They fill the house with delicious Christmas smells, are soft and perfectly spiced. I have to admit, they were pretty darn tasty!
Ingredients in these Soft Gingerbread Cookies
- Flour - important for providing structure to cookies
- Brown Sugar - gives a deep rich flavour and sweetens cookies
- Molasses - provides flavour
- Spices: ginger, cinnamon, and cloves - flavour boosters
How to Make my Soft Gingerbread Cookie Recipe
- Begin by whisking together the dry ingredients.
- Next, cream butter and sugar together and then add the last of the wet ingredients.
- Gradually add in dry ingredients.
- Roll cookie dough onto a parchment paper and cover tightly with plastic wrap. Place in the refrigerator for a minimum of 4 hours.
- Cut into shapes and chill cookies for 25 minutes. Place chilled cut out cookies directly into the oven to bake for 10 minutes. Be sure not to over bake or they will be very crunchy.
How to Prevent Gingerbread Men from Spreading
**It's important to chill cut out cookie dough in refrigerator before baking or the cookies will spread and lose their perfect little shapes. Make sure the dough is in the fridge for about 25 minutes before placing into oven.
How to Decorate Gingerbread Men
To decorate these cookies I use Sally's Baking Addiction royal icing! I love it, and it works every time! As I'm sure you can tell by my decoration, I do NOT make elaborately decorated cookies!!!

Piping Bags....done!
I typically don't use a piping tip when decorating my gingerbread men cookies. I simply cut a tiny opening in the top of the piping bag and find that it works like a charm.

Soft Gingerbread Cookies
Ingredients
- 2½ cups all purpose flour
- 1 tablespoon ground ginger
- ½ tablespoon ground cinnamon
- ½ teaspoon ground cloves
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter at room temperature
- ¾ cups packed light brown sugar
- ½ cup molasses
- 1 egg at room temperature
- 1 teaspoon pure vanilla extract
Instructions
- In a medium bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, baking powder, and salt. Set aside.
- In the bowl of an electric stand mixer, or using a hand mixer cream together butter and brown sugar until light and fluffy (2 min)
- Scrape down the sides and bottom of the bowl. Turn mixer to low speed and add in egg. Allow to mix until combined.
- Scrape down sides and bottom of the bowl. With mixer on low speed, add in vanilla and molasses. Turn mixer to medium speed and mix until completely combined (1-2 min)
- Scrape down sides and bottom of the bowl. Turn mixer to low speed and gradually pour in dry ingredients. Mix for 30 seconds before scraping sides.
- Turn mixer to medium speed and mix until combined and dough begins to form into a ball.
- Stop mixer. Gather dough gently into a ball. Place a parchment paper on the counter and use rolling pin to roll dough out to ¼" thickness. Place plastic wrap on top of rolled dough and place in refrigerator for a minimum of 4 hours to chill.
- Preheat oven to 350 degrees F.
- Remove dough from refrigerator and cut into shapes. Place onto a cookie tray lined with parchment paper and refrigerate for about 25 minutes.
- Place chilled, cut out cookies into oven to bake for 10 minutes at 350 degrees F.
- Repeat until all dough has been used.
