  • Chickpeas. These make the base of our salad. I recommend using canned chickpeas to speed the entire salad making process up! Make sure to rinse your chickpeas before you use them.
  • Pickles. I prefer to use baby dill pickles, pick which pickles you like best. Note, do not use sweet pickles for this recipe.
  • Red Onion. Adds a lot of flavor to the salad.
  • Feta. A finishing touch to the salad that is rich, buttery and soft.
  • Fresh Parsley. Brings the flavor.
  • Fresh Dill
  • Lemon Juice. Adds bright notes to the salad dressing.

Begin by rinsing and completely drying your chickpeas. Set aside.

Next, chop your red onion, pickle, parsley, and dill all very finely.

Pour your chickpeas into a medium bowl.

Add in your finely diced red onion.

Can I make this recipe vegan?

Definitely! Simply swap out the feta cheese for a vegan feta cheese options. I like this one.

Do I need to use fresh squeezed lemon juice?

No, you don't. I used lemon juice already squeezed, just make sure it isn't from concentrate.

Make Ahead Instructions

I recommend making this salad ahead of time (about 2 hours) in order to allow the juices to soak into the chickpeas and enhance the overall flavor.

Storage

This salad should be stored in the refrigerator in an airtight container for up to 3 days.

Ingredients
  

  • 2 cans chickpeas rinsed and dried 15.5oz cans
  • ½ small onion chopped very finely
  • ¼ cup finely chopped fresh parsley
  • ⅛ cup finely chopped fresh dill
  • 3 baby dill pickles chopped finely add more if desired
  • ¼ cup crumbled feta

For Dill Pickle Chickpea Salad Dressing

  • ⅓ cup olive oil
  • 3 tablespoon lemon juice
  • 1 tablespoon dill pickle juice juice from jar of dill pickles
  • 1 teaspoon minced garic
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions
 

  • Begin by rinsing and thoroughly drying your chickpeas. I use a strainer and then dry them with a tea towel.
  • Finely chop your pickles, red onion, parsley and dill.
  • Pour your chickpeas into a medium bowl.
  • Next add your red onions, pickles, parsley and dill. Stir to combine.
  • Pour dressing over salad. Stir to combine. I like to leave my salad to chill in the fridge for 2 hours to allow the flavors to come together, but this is not necessary.
  • Crumble feta cheese over salad. Add more or less depending on your liking.

For the dressing

  • In a small bowl combine olive oil, lemon juice, pickle juice, salt, pepper, and garlic. Stir to combine. Top salad with salad dressing.

    This recipe is amazing! If you love pickles, this is a must try! She recommends waiting about 2 hours so the chickpeas soak into the dressing but I couldn't wait that long, haha. Tomorrow it'll be even better. Thank you for sharing!
