Simple Classic Shortbread Recipe

One of the best easy shortbread cookies recipes! These cookies are perfectly buttery and indulgent- exactly what you need for the holidays!

Why this is the BEST classic shortbread recipe

  1. It only requires 5 ingredients
  2. You likely have all of the ingredients in your pantry already!
  3. They come together in under 20 minutes!
  4. They melt in your mouth (seriously I could eat 20 in one sitting)

Ingredients You'll Need

Unsalted Butter: Essential for flavour, make sure to use unsalted vs. salted butter. Salted butter will result in an unpleasant flavour! Your butter should be room temperature, so make sure you remove it from the refrigerator at least one hour before you begin baking.

All Purpose Flour + Cornstarch: AP flour creates the foundation of our cookies and creates stability and texture. Adding in cornstarch creates that extra soft texture you'll find in my classic shortbread recipe.

Powdered (Confectioners) Sugar: Imperative to sweetening our cookie but also for maintaining the soft melt in your mouth texture. Granulated sugar would cause our cookie to have a more chewy texture.

Pure Vanilla Extract: Always use pure vanilla extract NOT imitation vanilla extract for rich vanilla flavour.

Steps to Making this Easy Shortbread Cookies Recipe

  1. In a medium bowl whisk together AP flour and cornstarch. Set aside.
  2. In the bowl of an electric stand mixer with the paddle attachment, cream together room temperature butter and powdered sugar.
  3. With the mixer on low speed, add in vanilla.
  4. Scrape down the sides and bottom of the mixing bowl.
  5. Turn the mixer to low speed and gradually add in dry ingredients. Mix until well combined.
  6. Use a tablespoon to scoop dough and drop onto cookie sheet.
  7. Bake at 350 degrees F for 9-12 minutes.

Ingredients
  

  • 1 cup Unsalted Butter At room temperature
  • ½ cup Powdered (Confectioners) Sugar
  • 1½ cups All Purpose Flour
  • ¼ cup Cornstarch
  • 1 teaspoon Pure Vanilla Extract

Instructions
 

  • Preheat oven to 350 degrees F.
  • In a medium mixing bowl, whisk together all purpose flour and corn starch. Set aside.
  • In the bowl of an electric stand mixer with the paddle attachment, cream butter for 1 minute.
  • With the mixer on low speed, gradually pour in powdered sugar and mix 1 more minute. Scrape down the sides of the bowl and add in vanilla. Mix until combined.
  • Scrape down the sides and bottom of the mixing bowl.
  • With the mixer on low speed, gradually pour in dry ingredients. Scrape down the sides once all has been added.
  • Mix on medium speed until well combined about 2 minutes
  • Use a tablespoon to scoop batter and drop onto cookie sheet.
  • Bake for 9-12 minutes until slightly golden on the outer edges.
  • Allow to cool for 5 minutes on cookie sheet before transfering to cooling rack to cool completely.
  • Store in an airtight container. Will remain fresh for 1 week.
  • Can store in an airtight container in the freezer for up to 1 month.
