This highly addicting buttersctoch square recipe is the definition of easy but delicious! These squares are packed with rich butterscotch and peanut flavour and fluffy marshmallows. You'll be able to smell decadent butterscotch from across the room.

What do you serve these with?
I serve them on their own, but I bet they would be particularly delicious with a side of vanilla ice cream.
Why did my butterscotch chips clump together and not melt?
This happens when you heat the chips over too high of heat. Once your chips "freeze up" and won't melt, you will need to start over with a fresh batch of chips. Make sure to melt your butterscotch chips over low to medium heat to prevent this.
Can I use regular sized marshmallows?
I don't recommend this. Your ratio of marshmallow to butterscotch will be off. Always use mini marshmallows. You can use confetti coloured marshmallows for a pop of colour!

This easy butterscotch square recipe pairs rich and flavourful butterscotch, peanut butter and marshmallows for the ultimate indulgent treat.

Equipment

  • Medium glass or metal bowl
  • Medium pot
  • 9x9 square pan

Ingredients
  

  • 1 cup smooth peanut butter
  • ½ cup unsalted butter
  • 12 oz butterscotch chips
  • 1 teaspoon pure vanilla extract
  • 10 oz 1 package of mini marshmallows

Instructions
 

  • Line a 9x9 baking tray with parchment paper. Set aside.
  • In a double boiler over low to medium heat, melt butterscotch chips, butter, peanut butter and vanilla extract. Make sure to stir frequently and avoid heating too much. This will cause the butterscotch chips to not melt properly.
  • Once melted, remove from heat immediately. I like to watch for about 5-10 chips remaining and turn off the heat. The remaining chips will melt due to the residual heat. Fold in mini marshmallows.
  • Quickly pour into tray lined with parchment paper.
  • Refrigerate until firm. About 1-2 hours.
  • Cut and serve.

    I wonder if I could use the sea salt Carmel chipits as a substitute?

      Absolutely! I’ve used them a few times to make this square and actually prefer them over the butterscotch chips.
