These super soft and chewy butterscotch and chocolate chip cookies have the most delicious texture studded with chocolate chips, pecans, and butterscotch chips. We've create the most insanely delicious cookie recipe. I bet you won't be able to eat just one.
While these cookies are incredible all year round, I particularly love them in the winter season because pecans and butterscotch just making me think of winter flavors. You're going to love them.
This was inspired by my Oreo Chocolate Chip Cookies on this site. I love making slight alterations to an already incredible recipe to make new cookie recipes I know you'll love.

Ingredients for Butterscotch and Chocolate Chip Cookies

- Unsalted Butter - make sure this is room temperature. It's important for it to be room temperature to incorporate properly.
- Light Brown Sugar - this provides a delicious rich flavor to the cookies.
- Granulated Sugar - provides sweetness and helps bring air into the dough.
- Eggs - allows the cookies to mix well. Make sure these are at room temperature. If you forget to take your eggs out early you can fill a glass with warm water and then put your eggs in for about 10 minutes.
- Vanilla - provides delicious flavor.
- Flour
- Baking Soda - helps the cookies rise.

- Butterscotch Chips - the key to this recipe!
- Semi-sweet Chocolate Chips - I recommend using semi-sweet chocolate chips but if you love milk chocolate chips feel free to use those.
- Chopped Pecans

Step-by Step Instructions to Make Butterscotch and Chocolate Chip Cookies
Here are step-by-step instructions to make butterscotch and chocolate chip cookies. You'll find the full instructions in the recipe card below.
Cream together butter, brown sugar, and granulated sugar.
Mix in egg and vanilla.
Add in flour, baking soda and salt and mix to combine.
Pour in butterscotch chips, chocolate chips and chopped pecans. Mix to combine.
Bake the cookies but don't forget to bang the pan. Pan banging helps the cookies become a bit more flat and allows them to cook perfectly! I'll explain this in more detail in the recipe card.
Hint: Make sure that you use room temperature ingredients. This is important to allowing the dough to incorporate fully. Do not use your measuring cup to scoop flour out. Instead, use a spoon to spoon flour into the measuring cup and then level off the measuring cup. If you use the measuring cup as a scoop you will end up with packed flour in the cup and dry cookies.
Substitutions
Here are some helpful substitutions.
- Egg - instead of eggs, if you're looking to make this recipe egg free, you can use a flax egg or ¼ cup of apple sauce per egg required.
- Butter - use vegan butter instead of regular butter to make this vegan
- Flour - the flour can be replaced with a gluten free flour to make these gluten free cookies
Variations
Here are a few variations you can use with the recipe.
- Nuts - if you don't like pecans you can either completely omit them or change them for walnuts, almonds or any other nut you prefer.
- Chocolate Chips - if you want something more sweet, use milk chocolate chips instead of semi-sweet.

Storage
Store baked butterscotch and chocolate chip cookies in an airtight container at room temperature for up to 4 days.
These cookies do stand up well to freezing for up to 2 months in an airtight container. Allow the cookies to thaw on the counter for about 2 hours before enjoying
Top tip
Don't overcook the cookies!! It's important to bake these cookies fully, but also remember that the cookies will continue to cook while sitting on the baking tray outside of the oven while cooling.

You can either make these cookies and place them in an airtight container for up to 4 days or you can make the butterscotch and chocolate chip cookie dough and roll it into balls and then freeze in an airtight container for up to 3 months. When you're ready to bake them, simply remove them from the freezer and place on the counter for about 2 hours. Bake and enjoy.

Ingredients
- 1 up Unsalted Butter at room temperature
- ¾ cup Packed Light Brown Sugar
- ¾ cup Granulated White Sugar
- 2 Large Eggs at room temperature
- 2 teaspoon Pure Vanilla Extract
- 2¼ cups All Purpose Flour
- 1 teaspoon Baking Soda
- ½ teaspoon Salt
- 6 oz Butterscotch Chips
- 6 oz Semi-Sweet Chocolate Chips
- 1 cup Chopped Pecans
Instructions
- Preheat your oven to 350 degrees F.
- Line a baking sheet with parchment paper. Set aside.
- In the bowl of an electric stand mixer, cream together butter, brown sugar and white sugar for 1 minute until light and fluffy. Scrape down the sides of the bowl.
- With the mixer on low, add in the egg and mix until combined. Scrape down the sides again.
- Add in vanilla. Mix to combine. With the mixer on low speed, gradually pour in flour, baking soda, and salt. This should take about 20 seconds. Only mix to combine. Do not leave mixer running.
- Use a spatula to fold in chocolate chips, butterscotch chips and pecans. You can use the mixer if it's too hard to fold them in.
- Roll dough into balls ¼ cup in size. Place cookie dough on the baking tray - only 5 per tray. Do not press the cookies down. .
- Add more butterscotch chips and chocolate chips to the top! Bake at 350 for 13 minutes. Remove the cookies from the oven and gently tap the tray on the counter so the cookies become more flat. Place back in the oven for 3-5 minutes or until the tops of the cookies are no longer shiny. They will appear slightly under cooked .Allow to cool for 2 minutes on the tray before moving to the cooling rack
