Super Easy Buffalo Chickpea Quesadilla

This buffalo chickpea quesadilla is flavorful, spicy, and filled with gooey melted cheese. It's a staple in our house and the perfect spin on a classic quesadilla. We use buffalo sauce to add inrecdible flavor and pair it with cooked chickpeas to make a must-have buffalo quesadilla.

Why You'll Love This Buffalo Chickpea Quesadilla

  • They're super flavorful and spicy! You can change the amount of buffalo sauce you use to suit your spice preference.
  • Simple ingredients, most of which are in your fridge and pantry already. It's a fast recipe perfect for a slightly more elevated weeknight meal.
  • A spin on a classic quesadilla. If you like cheese quesadillas, I'm positive this is going to be a hit. My husband and I demolished ours!!

What Makes a Buffalo Chickpea Quesadilla

It's filled with buffalo spiced chickpeas and melted cheese sandwiched between a fresh flour tortilla. There are so many options for dipping sauces including sour cream, salsa and more. I loved the contrast of sour cream!

Ingredients You Need

Full ingredients are shown in the recipe card below, but here are the main ingredients you need to make this recipe.

  • Tortillas. In this recipe we use flour tortillas but you can use gluten free tortillas, spinach tortillas or any type you love.
  • Cheddar Cheese
  • 1 can of chickpeas. Use canned chickpeas to make this recipe even faster to make. You'll want to rinse and dry your chickpeas before using them. Note, you can use dry chickpeas but you'll need to prepare them ahead of time.
  • Buffalo Sauce. I prefer to use the Primal Kitchen Buffalo sauce, it has no added sugar and is vegan, and whole 30 approved.
  • Garlic. I used pre-minced garlic to expedite the process even more!

Step-by-Step Instructions

Begin by dicing your onion finely. Add onion and garlic to a skillet with olive oil and cook over medium heat.

Cook until onions are translucent (about 2 minutes) Add your rinsed and dried chickpeas and buffalo sauce. Cook for another 2-3 minutes.

Use a potato masher or fork to squish about half of the chickpeas.

Remove from heat. Assemble the quesadilla with a tortilla, the chickpea filling and cheese. Cook evenly on both sides.

FAQ

Can I make this recipe vegan?

Absolutely! Simply change the cheddar cheese for vegan cheese. The primal kitchen buffalo sauce is already vegan.

Can I add sour cream inside of the quesadillas?

Yes! You can. I recommend using a small amount to begin so it doesn't spill out.

Make Ahead & Storage

If you choose to, you can make the chickpea filling ahead of time and store it in the refrigerator in an airtight container for up to 3 days. This allows for easy preparation on busy weeknights and a quick and delicious meal!

I don't recommend frying up the quesadilla ahead of time. It tastes best when made to serve.

Ingredients
  

  • 1 can chickpeas 15 oz
  • ¼ cup diced white onion
  • ⅓ cup buffalo sauce I use Primal Kitchen Buffalo Sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon olive oil
  • 1⅓ cup grated cheddar cheese Use more as needed!
  • ½ cup sour cream for dipping your quesadilla in

Instructions
 

  • Rinse and dry your chickpeas. Put aside.
  • Dice onions finely. Place onions and garlic in a medium saucepan and cook over medium heat for about 2 minutes.
  • Add buffalo sauce and chickpeas. Cook for another 2-3 minutes until chickpeas are soft.
  • Use a potato masher to mash ½ of the chickpeas.
  • Remove from heat and set aside.
  • Over low to medium heat, sprinkle some cheese into the frying pan. Place the quesadilla on top (this is make the outside of the quesadilla have cheese too!) Assemble quesadilla with one side of tortilla with cheese and scoop a generous helping of chickpea filling on top of the cheese. Cook until cheese it melted.

    Simply delicious!! I was craving buffalo and wasn’t feeling up to eating meat. This was so perfect. I was afraid it would be dry at first, but it’s not! So good!
