Layered with caramel and mixed nuts, this is the best, easy caramel popcorn recipe! This recipe was passed along from my grandmother, and it's a recipe I share with all of my closest friends. I promise you won't find anything like it.
Every Christmas growing up my mom made this easy caramel popcorn. In our house it's called Poppycock --don't even ask where the name came from. I seriously have no clue. I changed the name to easy caramel popcorn recipe so you would know what the heck I was talking about!

What You'll Need to make Caramel Popcorn
- Popcorn Kernels (un-popped)
- Brown Sugar
- Margarine
- White Corn Syrup
- Vanilla
- Baking Soda
- Mixed Nuts
How to Make Easy Caramel Popcorn
Begin by popping your popcorn. My mom has an old school popcorn maker that we have used over the last 30 years. I went to my moms house specifically for this recipe!!! After the popcorn has popped, make sure to look through the popcorn and remove any unpopped kernels from the roasting pan.
Next, preheat your oven to 200 degrees F.
In a medium saucepan over low to medium heat, bring to a gentle boil your margarine, brown sugar, corn syrup, and salt. As the mixture heats, make sure to whisk it continuously. The mixture will begin to boil on the outer edges of the saucepan before it bubbles up.
Turn the heat to low and add in vanilla and baking soda. This will cause the mixture to bubble a lot - be careful not to burn yourself!!
Remove the sugar mixture from heat and pour over popcorn. Add in nuts and use a heat proof spatula to coat the popcorn with an even layer of caramel.
If you'd like to share your caramel corn, package it into individualized bags to gift to friends and family. Alternatively, you could top cupcakes or cake with caramel corn, or eat straight from the roasting dish!
This does make a large portion of caramel corn! You can easily half the recipe to suit your needs.

Easy Caramel Popcorn Recipe
Ingredients
- 1 cup unpopped popcorn
- 1 cup margargine
- 2 cups brown sugar
- ½ cup light corn syrup
- 1 teaspoon salt
- ½ teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 200 g mixed nuts
Instructions
- Preheat oven to 200 degrees F
- Pop popcorn and place into a large roasting pan
- In a medium saucepan over low-medium heat, bring to a boil margarine, brown sugar, corn syrup and salt
- Once at a boil, lower heat to low and add in baking soda and vanilla
- Mixture will bubble so take caution to not burn yourself!
- Pour mixture over popcorn to fully coat.
- Add nuts to popcorn
- With a heatprood spatula, mix popcorn so caramel completely coats popcorn
- Place into oven for 1 hour. Every 15 minutes, remove pan from oven and stir
- Eat warm or allow to cool before enjoying!

OMG!!! OMG!!! OMG!!!! This was amazing!!!!!!!!! Since I decided to make this on a whim and I didn't have mixed nuts in the house, but I did have candy pecans, I used those instead!! AMAZING!!!! I will for sure use mix nuts next time, because sweet and salty is sooooooooo good!!!!!
