Ingredients You Need
Full ingredients are shown in the recipe card below, but here are the main ingredients you need to make this recipe.
- Tortillas. In this recipe we use flour tortillas but you can use gluten free tortillas, spinach tortillas or any type you love.
- Cheddar Cheese
- 1 can of chickpeas. Use canned chickpeas to make this recipe even faster to make. You'll want to rinse and dry your chickpeas before using them. Note, you can use dry chickpeas but you'll need to prepare them ahead of time.
- Buffalo Sauce. I prefer to use the Primal Kitchen Buffalo sauce, it has no added sugar and is vegan, and whole 30 approved.
- Garlic. I used pre-minced garlic to expedite the process even more!
Step-by-Step Instructions
Begin by dicing your onion finely. Add onion and garlic to a skillet with olive oil and cook over medium heat.
Cook until onions are translucent (about 2 minutes) Add your rinsed and dried chickpeas and buffalo sauce. Cook for another 2-3 minutes.
Use a potato masher or fork to squish about half of the chickpeas.
Remove from heat. Assemble the quesadilla with a tortilla, the chickpea filling and cheese. Cook evenly on both sides.
FAQ
Absolutely! Simply change the cheddar cheese for vegan cheese. The primal kitchen buffalo sauce is already vegan.
Yes! You can. I recommend using a small amount to begin so it doesn't spill out.
Make Ahead & Storage
If you choose to, you can make the chickpea filling ahead of time and store it in the refrigerator in an airtight container for up to 3 days. This allows for easy preparation on busy weeknights and a quick and delicious meal!
I don't recommend frying up the quesadilla ahead of time. It tastes best when made to serve.
