My s’mores cake recipe is the definition of decadence. Moist chocolate cake layers sandwiching marshmallow fluff and chocolate ganache, coated in fluffy vanilla Swiss Meringue buttercream, chocolate ganache drip and graham crack crumble. Is your mouth watering yet?
At summer camp, I lived for s’mores. Heck, I still live for s’mores! So get your whisks ready - we’re about to bake a drool worthy cake!
What is a s’more?
It’s an absolutely delicious dessert typically made during the summer over a campfire! You sandwich a roasted marshmallow between two graham crackers and a square of chocolate. Basically it’s the only dessert I ever need. The combination of flavours is insane.
This s'mores cake recipe uses simple recipes that I’ve used time and time again - my fluffy chocolate cake recipe and Swiss meringue buttercream and applies a twist!
What You'll Need for this S'mores Cake Recipe
- 1 Batch of Fluffy Chocolate Cake
- 1 Batch of Vanilla Swiss Meringue Buttercream
- 198g Marshmallow Fluff
- Chocolate Ganache
- Graham Cracker Crumble
How to Make Chocolate Ganache
- Place semi sweet chocolate in a heat proof bowl.
- Heat heavy cream in a saucepan over medium to high heat. It is imperative to watch this closely because it can easily burn! Heat until small bubbles begin to form in the cream on the outer edges.
- Pour hot cream over semi sweet chocolate.
- Allow to sit for 15 seconds
- Use a small whisk to stir the semi sweet chocolate and heavy cream together. Whisk until there are no chocolate clumps.
- Allow to cool completely before applying to cake.
- Place semi sweet chocolate in a heat proof bowl.

- Pour hot cream over milk chocolate.
- Allow to sit for 15 seconds
- Use a small whisk to stir the semi sweet chocolate and heavy cream together. Whisk until there are no chocolate clumps.
- Allow to cool completely before applying to cake.
How to Apply a Chocolate Drip to your Cake
Pour cooled chocolate ganache on the top of your cake. Use your offset spatula to push the ganache to the outer edges of the cake while spinning my cake turn table. I use a small spoon to make specific drips down my cake as pictures above!
How to Assemble Your S’mores Cake
- Place your first chocolate cake layer on your cake board.
- Apply a ring of vanilla Swiss Meringue buttercream around the perimeter of the cake. This helps to prevent the marshmallow fluff from seeping out the sides of the cake when you stack your layers.
- Fill centre for cake with marshmallow fluff.
- Gently smooth cooled milk chocolate ganache. Make sure that the ring of buttercream you piped is higher than the level of the ganache, otherwise you are in for a melty mess!!
- Place cake in freezer for 5-10 minutes until marshmallow fluff and chocolate ganache have chilled.
- Repeat with remaining two cake layers. Cover cake in vanilla Swiss Meringue buttercream. Chill cake after completing crumb coat to ensure your cake isn’t wobbly and doesn’t accumulate a lot of crumbs while you are smoothing it out.
- Apply milk chocolate ganache drip to the top of the cake. I prefer to use a spoon, pictures above to achieve my drips and then pour the remaining ganache on top of the cake and spread it evenly with my offset spatula.
- Apply graham cracker crumble to base of cake. I just use my hand to press it on.
- Place large marshmallows on top of the cake and brown them with a torch. If you don’t have a torch (like me!) place them on a baking sheet and place in the oven on broil. Watch them closely so they don’t burn!

Ingredients

- 1 cup heavy cream

Graham Cracker Crumble
Ingredients
- ½ cup graham cracker crumbs
- 1 tablespoon unsalted butter at room temperature
- ½ tablespoon granulated sugar
Instructions
- Place graham crackers in food processor and pulse
- Place butter in a heat proof bowl. Melt in microwave
- ix butter, sugar, and graham cracker crumbs until sand like consistency
