How to Make this Tart Lemon Curd Recipe
Begin by creating a double boiler. Fill a medium pot with a few inches of water. Next place a glass bowl on top of the pot.
Turn the heat to medium and whisk together the eggs, sugar, salt, lemon juice. Next add in your cubed butter and lemon rind.
Whisk continuously until the mixture thickens. It is crucial not to leave your lemon curd unattended because if it heats too quickly the eggs will cook and you'll end up with scrambled eggs in your lemon curd!! (If by chance this does happen, you can use a sieve to strain the mixture and rid it of scrambled eggs ha ha)
Remove from heat when you can place a spoon into the mixture and lemon curd sticks to the back of the spoon.
Transfer to a glass bowl and place plastic wrap directly onto the surface of the lemon curd.
How to Store Lemon Curd
Lemon curd should be stored in an airtight container in the refrigerator with a piece of plastic wrap placed directly onto the surface of the curd. If you don't place plastic wrap right onto the surface a skin will form - it's a little yucky feeling in texture so you'll want to make sure you wrap it properly!
Lemon curd can be refrigerated for up to 6 days or placed in the freezer in a ziplock or airtight container for up to 3 months.

Tart Lemon Curd
Ingredients
- 3 eggs
- 1 cup granulated sugar
- ⅛ teaspoon salt
- ⅔ cup fresh lemon juice
- ¼ cup unsalted butter
- 1 tablespoon lemon rind rind of 2 lemons
Instructions
- Fill a medium saucepan with a few inches of water. Create a double boiler using a glass bowl.
- Over medium heat, whisk together eggs, granulated sugar, salt and lemon juice.
- Next add in your cubed butter and lemon rind. Gently stir until butter has melted.
- Whisk continuously for approximately 15 minutes, until the mixture has thickened. If mixture is not thickening, increase heat slightly. Do not stop whisking or you risk burning the mixture or having scrambled eggs in your curd - yuck!
- To test if your curd is finished, dip a spoon into the mixture. If it coats the back of the spoon and does not drip off the spoon, it is finished!
- Transfer to a glass bowl and let cool completely before using. Place plastic wrap directly onto the top of the lemon curd (to prevent a skin from forming)
